Zayin is pronounced z, like the words Zebulun, zebra or xylophone. It has the Gematria (numerical value) of 7, since it is the seventh letter of the Hebrew Alphabet.

Incidentally, the sounds of the letters in the Hebrew Alphabet always come from their names. So Aleph is pronounced a, Bet is pronounced b, Gimel is pronounced g, Dalet is pronounced d, Heh is h, Vav is v, Zayin is z, and so on. Knowing this makes it much easier to remember both the names and the Hebrew letters!
